Most people think of Stowe, Vermont and think if either the stunning fall maple leaves or they think of skiing but I love Vermont year round. Each season has something lovely to offer. One the hidden secrets of Stowe, Vermont are the amazing spas. Stowe Mountain Resort has one of the best in the US. Are you missing pizza on your low carb keto diet? These super easy to make Pizza Meatballs give you all the flavors of pizza while still being low carb. And did I say they are the easiest things to make!

Friday night is pizza night at our house. It has been since my kids were little. Every weekend we would either order, make from scratch or get a frozen pizza for our Friday night meal. We made all sorts of pizzas but it was always pizza night. 

I put together this quick recipe that will give you the flavors of a good pizza to satisfy your pizza cravings. Your family will love it too!

Cheese Stuffed Slow Cooker Pizza Meatballs

makes 8 meatballs

  • 1 pound of ground beef
  • 4 mozzarella cheese sticks
  • 1 jar of your favorite pasta red sauce
  • salt and pepper 
  • fresh parasan cheese

Line your slow cooker with a crock-pot liner. Turn your crock-pot on the high setting. 

Form meat into a ball then flatten it slightly. Using a pastry cutter or knife cut into 1/4 size pieces and then into 1/8 size pieces.

Cut cheese sticks in half.

Form each piece of meat into a ball. Flatten ball a little bit and form into a ball over the cheese piece. Repeat for each piece of meat.

Place meatballs into the slow cooker and pour sauce over top. Sprinkle with salt and pepper.

Cook in slow cooker for 2 hours on high until meat is cooked all the way through.

Top with freshly grated parm!

 

 

 

A Quick Flavory Food Tip Bacon Lovers are Going to Love

 

Here is a quick tip for bacon lovers.

Bacon is a big part of my low carb keto diet. It's perfect in salads, on top of a BLT Lettuce Wrap, in omelets, as a quick snack and makes my favorite cooking oil, bacon butter. Let's just say I eat a lot of it on this way of life diet. 

I'm all about quick easy and convenient and using a coffee filter to drain your bacon is both easy and convenient. 

I made this batch for my BLT Wedge Salad. It is sooo good! 

 

Quick Pickled Red Onions So Easy Anyone Can Make Them!

 

Red pickled onions are so easy to make and are one of my favorite things to top salads, wraps and a  good charcuterie board.

Pickled onions are popping up topping burgers and salads at all the trendy restaurants. They are something our grandmothers use to make. I don't really know why they ever fell out of popularity in food because they are soo flavory and easy to make.
I loved picked out the pearl pickled onions out of my grandma's mustard pickles. I promise to post the mustard pickle recipe sometime soon because anyone who makes a roast should have some mustard pickles to add as a relish.


You can make pickled onions with an onion really. I'm making a batch with both red onion and yellow onion. 
You will simply need vinegar and onions. That's it! See super easy!
I love using my vintage ball canning jar with the glass lid and clamp on it to make pickled onions.

Peel your onions. Slice your onion into thin slices.  Add to a jar of vinegar. All to pickle in the refrigerator for about 2 days then they will be ready to top your hamburger, salad or add to your charcuterie board.

Fresh pico de gallo is one of my favorite kinds of salsa. It made from all fresh ingredients and is another one of those delicious condiment toppings to have on hand. It's great on everything from carne asada to fish!

Did you know that Pico de Gallo only has 5 ingeirents? It's super eay to make. If you want to grow one thing even on a porch garden this summer make it a pico de gallo garden. Tomatoes and jalapenos are some of the easiest garden plants to grow. Add a pot of cilantro and you will be making this delicious recipe all summer!

Fresh Pico de Gallo Salsa Recipe

serves 4

  • 3 large tomatoes
  • 1/2 onion
  • 1/2 fresh jalapeno
  • Small bunch of cilantro
  • Juice of 1 lime
  • Course Sea Salt 

Simply chop all your vegetables into small pieces. Chop cilantro. Mix together in a bowl. Squeeze the juice from 1 lime over the top. Salt to taste.
